Fit Food: Potluck Extravaganza!

Last Thursday, in honor of the holiday weekend, Fitness Anywhere hosted a company potluck... with a twist.  People who volunteered to cook were then able to pull a ticket out of a hat with a recipe from the Gourmet Nutrition Cook Book.  Then we would get to sample the cuisine and provide feedback on the food.  What resulted was a fantastic and healthy feast.

Here is the list of the fantastic meals that were created:

Jordan – 8 Layer Dinner

Nick – Curry Coconut Chickpeas

Tim – Strawberry Coconut Pudding

Nicole – Chicken Caesar Salad

Prachi – 8 Layer Dinner (Vegetarian)

Laure – Chicken Caesar Salad

Tyler – Pumpkin Bars

Jennie – Portobello Pizzas

Frank – Strawberry Coconut Pudding

Stephanie – Curry Coconut Chickpeas

Keith – Chicken Caesar Salad

Brian – Portobello Pizza

Holden – Vegetable Lentil Pate

Joe – Portobello Pizza

Kim – Vegetable Lentil Pate

Liana – Curry Coconut Chickpeas

Stephanie really used her biceps to grate the ginger for her Curry Coconut Chickpeas recipe.

One comment overheard, "What other company would have a party based on eating healthy food?" 

This was one delicious experiment and general consensus is that we need to have more potlucks!

Okay, maybe I'm just a dessert whore, but woot for the pumpkin bars.

I made one of the chicken caesars, and it was simple.  I didn't even use oil for the chicken, just to see how the nonstick grill pan would hold up.  No worries at all.  (Plug All-clad here.)  I substitued a little vermouth for lemon juice (oops, I ran out) and that added a little different flavor that I thought was nice.  I used the nonfat greek yogurt, which might have been a little tart for the dressing, I'm not sure.  I'd test some others to be certain.

One tip is regarding the chicken: pounding the breasts out helps ensure tenderness and doneness, letting them rest and cutting them "along the flesh" (basically with the grain of the meat) helps retain the moisture.  End result: yay!

Side note: where is all the sodium content information in this tome of ours?

I cooked the Chicken Caesar salad and it was a very yummy and easy-to-make dish. In particular, I was happy to discover their vinaigrette recipe with olive oil, lemon and yogurt, which is tastier and healthier than traditional vinaigrettes.

At the Potluck, I was actually amazed at how tasty every single dish was -- better than at the restaurant! I wasn't expecting such yummy stuff coming out of a nutrition book. My top favorite was the ground Turkey Casserole.

how come everyone else got the east stuff?...the Lentil Pate or Lentil Quiche (I don't have a food processor) took and just under two hours to make but was very tasty and kept for a few days and was an amazing lunch for the days that followed.

So I made the lentil pate and that was probably my least favorite dish. They looked like bran muffins and the texture was dense and mushy. My coworkers and roommates would disagree they ate all of them right up!

Curry chickpeas, turkey casserole and chicken caesar were my personal favorites and had to finish the meal off with a pumpkin bar!

Did I mention I rolled myself home?

I made 8-layer Dinner vegetarian version. It was easy to make and different recipe since I made it for first time. I substituted Tofu for chicken and it turn out well though it was not my favorite dish.

My favorite recipes at potluck were Curry Coconut Chickpeas, Strawberry Coconut Pudding. It was great fun and should be continued more often.

I didn't participate in the cooking of any dishes, but there was so much food that I was told to help myself in the eating of them - best part if I do say so! Some of my favorites were the Curry Coconut Chickpeas, Chicken Caesar Salad and Ground Turkey Casserole. I didn't get a chance to try the deserts, but they looked delicious.

Great job to you folks who put in the effort and created these wonderful dishes!

I made the curry coconut chickpeas - healthy, easy to make (took about 10 minutes) tasted great, or at least steph's and liana's did. I doubled the recipe and I think I added too many chickpeas which took away some of the flavor. The ground turkey casserole and the pumpkin bars were my favorites, but overall everything was really tasty and hopefully we get to do this again soon!

I made sure i got a taste of every dish, from the protein yogurt to the coconut chickpeas, i thought the folks at Fitness Anywhere were exceptional cooks.  

In an attempt to pick my favorite dish...i did have some difficulty, and there were several  ties for second, but, the 8 Layer Dinner was the standout. Though this slightly more advanced dish (compared to yogurt with powder..) was assigned to an intern, he did a fabulous job and it turned out great. I must have gone back 3 times and still couldn't get enough.

I don't usually cook so, "G. Delano," I'm thrilled you liked the 8 layer dinner I threw together. Wasn't very "advanced" at all actually. I know you're surprised that an intern came through in such a big way...but hey...what can I say...I just know that here at Fitness Anywhere people expect the best, so I tried to make my assigned dish the best that it could be. Easy to make, and healthy...can't beat it.
